A lovely carrot cake made with pecan nuts, raisins, orange and spices, with a little bit of wholewheat flour in the mix for flavour and texture. Sandwiched and topped with a tangy cream cheese frosting, it's a firm favourite.

How to defrost: defrost at room temperature for at least 2 hours, in the packaging it arrives in.
Bring to room temperature when eating, and enjoy as soon as possible after defrosting, storing in the fridge for up to 5 days.
